Pull Apart Spinach Bruschetta

SpinachBruschettaThis recipe came about because I had just created the most perfect Tomato Bisque soup I have ever had the pleasure of tasting, BUT, it seemed like it needed something equally as perfect to go along with it.

HOWEVER, I did NOT have any fresh basil but wanted a Bruschetta type of feel to go with it.

I DID have spinach, however, so…I put together a few things and made this delightful and delicious dish that I could seriously just eat all by itself, just like nachos!! In fact, feel free to pile up that toasted bread and this mixture on top and eat it AS IS. Yum!

Ingredients

Instructions
  1. Bake your sliced bread in the oven on hi broil for 3 minutes, then flip and broil for another minute. Keep watch to make sure they do not burn. Then, remove from oven.
  2. Place all other ingredients in a bowl and mix together.
  3. Place your bread on a foil lined baking sheet or other oven safe dish.
  4. Top with the spinach, tomato mixture.
  5. Place in oven at 425 degrees for 7 to 10 minutes, just until cheese is melted. You must keep watch.
  6. Remove from oven and enjoy.

Double this recipe if you'd like to eat them like nachos!!
