This is super simple and the reason I’m putting it in here is because many people who are transitioning to eating a plant based diet think the only thing they can eat is a salad. I’ve had people expressly ask me for simple meal ideas because they have no idea what to make and or have no time to cook because of busy work schedules.
This is one of those recipes, and I will be providing many simple ideas like this.
You literally only need a few things. You need a can of vegetarian refried beans, some fresh salsa or store bought salsa, some cilantro, and some rice. That is all you need to make an extremely healthy meal.
Oh, for those of you who are unaware, I am not afraid of carbohydrates. I embrace them. Don’t be fooled into being scared of them. You need carbohydrates. What you do not need is carbohydrates plus tons of processed fats and oils all together.
