Sausage, Egg & Cheese English Muffin

unnamed (2)Wow. I can’t believe this is even real. Completely plant based, vegan breakfast deliciousness. Is that a word?

I knew when I was creating my Sweet & Spicy Seitan Sausages that I wanted to create a breakfast sandwich to go along with them. It was my plan all along! Well, today, I made that sandwich and was over the moon excited that they really came out more than perfect!

This recipe is more about how to make the “egg” than anything else, because I also used my recipe for the amazing ‘Creamy Cheese Sauce‘ with this. I used the cheese sauce cold, and spread it on like butter.

So, you will need to make the sausages and the cheese sauce. Of course, if you’d like to use store bought cheese and sausages as well, that is your prerogative. 

You can use vegan butter as well and butter up those sourdough pieces if you’d like. I did, but again, it is only an option.

  1. In a food processor, pulse your clove of garlic.
  2. Then, add in your silken tofu, and coconut oil and process on high until smooth.
  3. Add in the rest of the ingredients and process on high until smooth.
  4. Heat a pan on high with about a tbsp of coconut oil.
  5. Grease the inside of the mason jar lid with coconut oil and place in the pan.
  6. Spoon in your batter. Turn heat to medium.
  7. Cover with a lid that just covers the 'egg' and let it cook for 5 minutes. (Just leave it alone)
  8. Then, with a spatula, pick up the 'egg', remove the ring, and flip.
  9. You do not need to place the cover back on. Cook for another 5 minutes.
  10. If you have some of the sausage, fry that up in the same pan.
  11. To plate, butter each side of your sourdough english muffin with vegan butter. Spread some of the cheese on the bottom piece. Then, add your sausage, then your egg, then your top piece of sourdough.
