Egg, Sausage and Cheese Breakfast BAgel

This breakfast bagel has gotten a lot of attention and a recipe has been requested. I most often throw things together at the last minute, but it did come out really well and was pretty tasty. This was actually made for my husband.

In the past, I have made tofu scrambles and they just seem to come out a little too wet for me for some reason. Today, I started with the intention of making this bagel sandwich and implemented a little last minute trick to keep it together and less watery. It worked, and from now on, I will be using it!

The trick is to sprinkly a little bit of tapioca starch over your scramble when it is just about done and then mix it in.

  1. First, slice the ends off the asparagus, then cut the rest in half.
  2. Sautee the asparagus on medium high heat in water, a little oil, or vegan butter of your choice until softened. Add in the minced garlic and mix. Then, take out of the pan and set aside.
  3. In the same pan you sauteed the asparagus in, drop in the tofu and chunk it up into egglike pieces with a wooden spoon. DO NOT ADD WATER.
  4. Add in your tumeric a little pinch at a time and work it through until it turns a bit yellowish.
  5. Add in a little of the black salt. (too much can be overpowering so be careful)
  6. When it has been mixed together, sprinkly about a teaspoon full of tapioca starch over the mixture and mix well. It should thicken up a bit.
  7. Add one slice of Daiya swiss cheese on top and place a lid on the pan. Once it has just started to melt, take the lid off and stir together.
  8. Put mayo on each slice of your bagel, then lay down spinach on the bottom half, flatly. Do not pile it up.
  9. Scoop your tofu egg scramble mixture out of the pan and carefully place it upon the spinach.
  10. Top with your asparagus and place the other bagel on.
  11. Enjoy! This will be messy, so be sure to have a fork and napkin ready!
