Lemon-Chive Potato Cakes

After making this today I wondered, ‘why’? ‘Why haven’t I made these before?’

You’d think that with all of the potatoes that I consume on a mostly starchivoric (made up that word) diet, that this would have hit my brain earlier.

Oh well. It’s here now, and it was delicious. Otherwise, it wouldn’t have made it here.

So, grab your potatoes and let’s go. This one is super simple!

This recipe makes about 10 cakes.

  1. Pre-heat oven to 400 degrees.
  2. Line a baking sheet with parchment paper.
  3. Place your clean potatoes (no need to peel, but you can if you want) in the pot of water and boil for 30 to 45 minutes. (If you left the peels on they will start to remove themselves at this time)
  4. Remove your potatoes from the water and let them cool in a bowl.
  5. Once cooled, remove the skins and discard. They should remove easily.
  6. Mash the potatoes. (do not add water or any other liquid) Some lumps are fine.
  7. Add in your chopped chives, your lemon zest, onion powder, garlic powder, salt and paper and mix together well.
  8. Form circular patty shapes, as shown in above picture.
  9. Place onto your parchment paper and bake for 15 minutes.
  10. Then, flip over and bake for 5 minutes.
  11. Remove from the oven and plate with a sprinkle of nutritional yeast, a sprinkle of paprika, and a sprinkle of parsley. Serve with your favorite sauce or eat them plain.
  12. Enjoy!
