It used to be that I craved a warm bowl of chili on a cold day. That was back when I lived in Missouri. These days, I’m living it up with the beach life in sunny Florida, so, while we do get some chilly days, there just aren’t enough to look forward to making chili that far in the future.

Luckily, it doesn’t matter to me whether it is hot or cold outside, because this Gods & Goddesses recipe I came up with is so satisfying! My husband would take this to work every single day of the week if he could, which is why this recipe is a bulk recipe. It is so versatile and can be used with many other dishes. So, whip up a batch of this GOD Chili and you can either freeze it for the future, or you can package it up for lunches for the week. Should be good for up to 5 days in the refrigerator.

Ingredients

Instructions
  1. Sautee the peppers and onions in the bottom of the same large pot you will be making your chili in on medium high heat. You do not need to use oil when sauteeing. The peppers and onions hold enough water that they will release from the pan after a bit. If they begin to stick, use a little water. Sautee until the onions are clear.
  2. Then, add the minced garlic and stir for a few seconds.
  3. Then, add the rest of the ingredients.
  4. Give it a good stir and then turn the heat down to a simmer.
  5. Simmer for about 3 hours, checking every so often for thickness. Add water if you would like it to be thinner, and add more lentils if you would like it to be thicker.

    Do you really use 1/2 cup of cumin?
