Dani’s Vegan Pho

This is just SO good!

Pho is a type of Vietnamese soup, typically made from beef stock and spices to which noodles and thinly sliced beef or chicken are added as well as veggies.

It is prounounced FUH. I still call it FOE though.

Pho is all about the broth. Truly. This broth is outstanding and any left over broth, (if that is possible) you may have is delicious when making rice instead of using water.

You can add any assortment of veggies to the top. So, this recipe will mainly be about the broth and then you just dice up whatever veggies you have on hand and throw them on top and make it beautiful! Eating beautiful food is pleasing to the psyche and the belly at the same time.

Here I have cut up some purple onion, sliced shiitakes, chopped green onion, cubed up some tofu, cilantro and sprinkled with a bit of red pepper flakes. OUTSTANDING!

You can use any type of noodles that you wish. I used thin rice noodles.

  1. Put everything except the brown sugar into a pot, stir and bring to a boil. (I like to add jalapenos and red pepper to my stock because i like it spicy, but that is up to you)
  2. Once boiling, reduce to a simmer and add your sugar.
  3. Cover and simmer for 30 minutes.
  4. Take a taste. If it needs more sugar, add it and stir allowing to simmer for 10 more minutes.
  5. With a sieve, remove EVERYTHING from the stock pot and discard or save for another stock. Be certain to remove the peppercorns! SAVE the shiitakes and slice them up for the topping.
  6. Prepare your noodles according the directions on the package.
  7. Prepare your chopped veggies.
  8. In a bowl, place noodles, then a large amount of broth, then top with your chopped veggies and serve.
  9. Enjoy!!
Recipe Notes

The vegetarian Pho spices are optional only. This is a container I have found at my local Asian market which is basically a powdered broth seasoning for Pho soup.
