Crockpot “Beef” Stew with Dumplings
Crockpot. ‘Nuff said.
They fill up the house with yummy smells and hopefully make the neighbors jealous. We live in a condo in Florida right now, so, I know that it’s always smelling great in here and it wafts around the outdoors as well. Love that!
Filling hungry bellies with healthy food is important, but, there are a lot of other things that fill my day, especially this very busy adorable toddler tugging on my arm right now. That’s one of the reasons a crockpot is a godsend. If you don’t have one, get one!
I have these ‘soy chunks’ that I’ve needed a use for, and this seemed like the perfect thing to make. It came out exactly as I had hoped, with a rich sauce, softened vegetables, and the texture of the soy chunks was spot on. I purchased mine from my local health food bulk bin. The dumplings were created with Bisquick and Soy Milk and are extremely easy.
