Crockpot “Beef” Stew with Dumplings

Crockpot. ‘Nuff said.

They fill up the house with yummy smells and hopefully make the neighbors jealous. :) We live in a condo in Florida right now, so, I know that it’s always smelling great in here and it wafts around the outdoors as well. Love that!

Filling hungry bellies with healthy food is important, but, there are a lot of other things that fill my day, especially this very busy adorable toddler tugging on my arm right now. That’s one of the reasons a crockpot is a godsend. If you don’t have one, get one!

I have these ‘soy chunks’ that I’ve needed a use for, and this seemed like the perfect thing to make. It came out exactly as I had hoped, with a rich sauce, softened vegetables, and the texture of the soy chunks was spot on. I purchased mine from my local health food bulk bin. You can also purchase them online at Amazon, and that link is on my shopping page.

The dumplings were created with Bisquick and Soy Milk and are extremely easy.

  1. In a large glass measuring cup, mix all broth ingredients together. Set aside.
For the Stew
  1. First, in a pan on medium high heat, sautee the onions until softened. NO OIL OR WATER IS NEEDED. Then, add them into the crockpot.
  2. Add all other 'Stew" ingredients to the Crockpot.
  3. Add the broth and stir well.
  4. Turn crockpot onto high. Cook for 3 to 4 hours.
For the Dumplings
  1. Mix the Bisquick and the soy milk together quickly. Do not over mix.
  2. Heat a large pot of hot water to boiling on the stove. Then turn down to a soft boil.
  3. Drop spoonfuls of the mixture into the boiling water making sure they do not touch eachother. They will first sink to the bottom then rise to the top.
  4. Let them softly boil for 10 minutes. Then, reduce heat to a simmer, cover and let cook for 10 more minutes.
  5. Remove from the pot with a slotted spoon and set onto a plate until ready to serve.
  6. Enjoy!
