Chipotle Rice & Chik’n Soy Curls Burrito

unnamedI love coming up with new burrito combinations, mostly because my husband works very long hours and I like to send him to work with delicious, nutritious, and carb loaded food so that he is on his toes the whole time.

Here is what I sent him with today. I know it’s really good, and I hope you try this combo as well!

You will need 1/2 cup of Chipotle Mayo Sauce, and Dani’s Taco seasoning, so check out those very simple recipes when you can.

You’ll also need soy curls! If you don’t have these yet, you really need to get them and keep extra around!

Chipotle Rice & Chik'n Soy Curls Burrito

  1. First, you will need to combine your hot water and your chicken powder together.
  2. Then, put your soy curls in a bowl and pour the water and powder mixture over them and stir together. Let those sit for 15 minutes.
  3. Meanwhile, make your rice according to the instructions.
  4. Once rice has softened, turn off the burner and add in your Chipotle Mayo Sauce and stir together.
  5. Once the soy curls have hydrated, mix in about 1 tbsp or to taste, your Dani's Taco Seasoning. Mix together well.
  6. In a pan on high heat, put in your soy curls and onions and sautee for about 7 to 10 minutes. Add in any of the broth water if needed. NO OIL is used. Then, take off of heat.
  7. Lay out your tortillas. Layer first with the rice mixture, then the spinach, then the red peppers, then the onions and soy curls.
  8. Roll up and repeat for any remaining burritos.
  9. Enjoy!
